The small, functional winery is situated on the crest of a small hill, an excellent position from which most of the estate can be seen.
Its design also aims to reflect the estate's philosophy. The winery, which has a somewhat avant-garde style which reflects the curvaceous lines of the estate, has been designed to produce quality wines.
The winery occupies an area of 1,500 square metres. The building has three floors: the company offices, the production and bottling area and the ageing cellar.
We strive to make our Priorato wines an accurate reflection of the terrain, which is strongly influenced by the slate soil known locally as “Licorella”, by the climate and by the surrounding environment. For that reason our estate has always made an effort to respect the environment, leaving substantial areas of woodland and hundred-year-old olive trees which live in harmony with the vineyards and the winery.
The wine harvest is carried out at the optimum stage of the ripening process depending on the terrain and the grape variety. Harvesting is done by hand and the grapes are transported to the winery in 14kg boxes ready for the wine-making process to begin.
The philosophy of the winery is based on an exhaustive study of the grapes grown in the different parts of the estate. Small batches of wine from each vineyard are produced individually in small tanks so as to associate the type of wine with its place of origin. The different wines are then taken to the underground ageing cellar where they are individually aged in French oak until they are ready for the preparation of the cuvée. This is determined by tasting the wine and is followed by the bottling process.
