Alcoholic fermentation: 7 - 10 days at a controlled temperature in 30 and 70 Hl tanks.
Post-fermentation maceration: 14-15 days.
Ageing: 12 months in new ( 70 % ) and 2 nd year ( 30 % ) French oak barrels

Comments

Dark ruby red in colour with faint hints of violet. Intense on the nose, with balsamic notes that develop into ripe red fruits and forest fruits, which are complemented by spicy, smoked, roasted, aniseed and chocolate notes from cask-ageing. Lactic, mineral and liquorice notes are also present. Well-structured and glycerolic on the palate with good tannins. Persistent finish and pleasant after-taste.
